With the warmer weather and all those summer BBQs coming up I thought I'd share some of our favourite salads. Being vegetarian, having delicious and filling salads are always a go to for those BBQ dinners.
Here's some summer salad inspiration :)
Watermelon, Mint, and Feta Salad
Ingredients - watermelon, mint, feta, red onion, and cucumber.
Kumara, Orange, and Pecan Salad
Ingredients - roast kumara (I use a mix), chopped orange, dates, pecans, baby spinach. Dressing - mayo or a natural yoghurt with a pinch of curry powder. As a rough guide 1 cup of mayo/yoghurt to 1/4 tsp of curry powder. Mix through well.
Jewelled Quinoa Salad
Ingredients - Cere's Organics rice and quinoa mix, baby spinach, pomegranate, roasted chopped walnuts, cranberries, red onion, and feta. For the dressing I use a good quality olive oil and a decent squeeze of lemon.
Simple Haloumi Salad
Ingredients - A salad mix, haloumi (cooked lightly in olive oil), cherry tomatoes, chucks of peach, blueberries, sliced almonds,
Broccoli and Blueberry Salad
Ingredients - broccoli, baby spinach, pinenuts, blueberries and avocado. Add a dressing of your choice if you wish.
Simple Pasta Salad
Ingredients - penne pasta, cherry tomatoes, red onion, feta, baby spinach. Mix through basil pesto.
