LAST OF THE WINTER ROOTS

Spotted some parsnip leaves under one of my giant borage plants, which gave me a bit of an idea for dinner. The parsnips were pretty small… just how I like them, I knew I had some carrots, fennel and beetroot… dinner sorted!

Scrubbed all the roots and tossed them together with a chopped red onion, a couple of roughly chopped garlic, the sliced fennel and a little olive oil, crumble over some feta and bake for 45mins at 180C.  Devine.
