What do you do when the parsley is starting to smother the Elephant Garlic?.... you make parsley pesto of course.
Into a food processor, put 40g of picked off parsley leaves (no stalks) a handful of basil leaves, 2 cloves of peeled garlic, 60g pine nuts (or other nuts) and 60g grated parmesan. Blitz. While the motor is running slowly add olive oil until the right consistancy for pesto (approx 120ml)
