If you love rhubarb, you probably need to try this cake! It is a brilliant sweet & sour dessert type cake.
In a bowl mix 2 cups of plain flour, 3 tsp baking powder & 1 tsp cinnamon. Add 500g rhubarb chopped into 2cm pieces - mix well.
Put 60g softened butter and 1 & 2/3 cups brown sugar into a food processor and whizz. Add 2 eggs, zest of 1 lemon & 1 tsp vanilla extract. Add this to the rhubarb/ flour mix and stir well.
Add 250g sour cream and mix well again.
Spoon into a 23cm lined cake tin and bake at 160C for about 1 &1/4 hours, or until a skewer comes out clean.
1/2 way through the cooking time sprinkle 1/2 tsp cinnamon mixed with 1/2 tsp brown sugar over the cake.
