Funny old vegetable ... collard greens.
It is a super easy to grow brassica, that the white butterfly doesn't seem to touch. I let it self seed for the next year just because it always looks healthy and happy. I once made quite delicious ravioli with it, but otherwise we haven't really been eating it. The leaves are packed with good vitamins - so I should try a bit harder :-/
What I have dicovered, is that the flowers are really great in salads... just a wee cabbagey hit of flavour. The bees go mental for them too.
Wondering if anyone has any collard recipe suggestions?
