I've just been reading about Jordy's zucchini glut. Mine are not quite at the stage of having 15 waiting to be eaten, but I did have five that were perfect for grating into the two cups I need for my zucchini brownie.
We have 4 grandchildren staying for a few nights next week so a brownie will make a snack treat for them - although SH is determined they will eat them outside and be hosed down afterwards!! Our eldest grandson who is 8 says that Nanny always makes cakes with vegetables - but he scoffs them nonetheless!
These freeze really well so any leftovers will go in the freezer for future grandchildren visits or SH work lunches.
