My mums over from Australia for Christmas. She's coming for dinner tonight so I thought I'd pop a roast in and go and raid the garden for veggies. I checked my carrots thinking they'd be way off still but there were plenty of baby rainbow carrots just waiting to be roasted in honey for dinner along side some fresh spuds and salad greens. Which reminds me, I must go back for a couple beetroot to roast too, my mum loves beetroot!
