The wind has eased, and apart from a few intermittent downpours throughout the day, it hasn't been too bad up here today. I also believe we have some nice weather on the way this weekend which means I can hopefully get the tomatoes and capsicums in. That will just leave the big garden to do.
While I await for the weekend, I am busy trying to eat my way through the fridge so that the next lot of veggies from the big garden can go in there. We were getting there until my mother turned up with some broccoli, cauli and cabbage and fridge was full once again. I shouldn't complain though as I know many are struggling at the moment.
One of our new ways to use up a lot of veggies in one go is to make a stir-fry with vermicelli (bean) noodles. They are not something I normally cook with so it's been a nice change from the mince chowmein that i often do to get rid of an array of veggies.
Basically we chop up veggies with the main component being cabbage. Cook onion, garlic and ginger. Toss in rest of veggies. Cook. Add marinade. I use 2 Tbl soy sauce/1 Tbsp rice vinegar/1 Tbsp honey/1 1/2 tsp mirin. Cut noodles in half. Cook noodles for 3-4 mins. Drain. Add to veggies. I added chard today which was okay, but think I preferred it last time without it.
