While I sit here listening to the wind howl, and cross my fingers hoping that this latest system.does not hit us despite us now being in a Precautionary State of Emergency, I thought I'd share one of my favourite ways to use up excess berries.
Once we have had our share of fresh berries, and jams are made, I start freezing our berries to add to our baking over the course of the year. The Berry Crumble slice (a VJ Cooks recipe) is very adaptive and a favourite in our house. We usually use boysenberries, but will chuck in whatever we have excess off. Today i used a combination of blueberries and boysenberries fresh from the garden. Normally I add them straight from the freezer (I find crushing them slighyly is a good idea). We have even made it with apples, raspberries and white chocolate. Whatever we have that needs using up.
This is seriously the quickest and easiest recipes to do (it's one of those recipes I whip up in the mornings before work). We find that it lasts better if stored in the fridge. Heated up, it actually makes a really nice dessert with some custard.
