Apart from vegetables one of the loves of my gardening life is hostas.
I have blogged about these before. They never cease to astound me with their glorious leaves, their longevity and the fact that they die down to nothing in winter and then burst into stunning lushness in spring.
Hostas like a slightly shady and damp area and will reward you with a display that would rival any floral arrangement you have ever seen.
Apparently the shoots are also edible - a little like asparagus - but I could never bring myself to murder a hosta shoot when it is going to become something so beautiful.
If you want to grow them just ensure you protect from hungry slugs and snails in early spring.
