Hope it's okay to ask here but as you can see I'm over run with courgettes now. I gave 7 to my dad last week, 7!! And I have 6 in my fridge, 4 on the door step I picked today and probably another 6 or 7 about to be ripe anyday now on plants. I made a big batch of zucchini savoury muffins this morning for snacks and kindy lunches but that only used up 1. I think 4 plants may have been a bit of an over kill and I fear for when they all start fruiting 😅. last year they weren't as prolific so I thought this year I'd do an extra couple plants, turns out just the one plant probably would have been suffice. However I love a good courgette pickle for cheese and crackers but I've never pickled them myself so was wondering if anyone had any delicious recipes and wouldnt mind sharing, could you could pop it below and I'll give it a go!
