This time-honoured variety produces heavy crops of short, sweet-flavoured cucumbers that are low in acid. Lebanese cucumbers have crisp, pale flesh with tiny seeds, and are best eaten skin and all. Mix with mint and yoghurt for a refreshing laban or tzatziki.
