The garden growth has just taken off in the last week. Some tomatoes are starting to flower and I have some teeny tiny zucchini growing.
Zucchini's as we all know are really productive plants, you get so many off one plant. So I thought I would share a scrummy chocolate zucchini cake with you, that is super easy to make and doesn't dry out. As we are all soon going to have too many we don't know what to do with!
Chocolate Zucchini Cake
4 eggs, 1 cup oil, 2 cups flour, 1 cup brown sugar, 1/2 cup cocoa, 5 teaspoons honey, 2 teaspoons powered coffee, 1 120g pottle of yoghurt, 2 teaspoons baking soda, 2 teaspoons baking powder, 200g dark chocolate, 1/2 teaspoon salt, 2 teaspoons vanilla essence, 3 courgettes grated
Preheat oven to 180degrees.
Mix all the ingredients and beat for one minute.
Pour the mixture into X2 20cm lined tins.
Cook for 10 minutes, then reduce temperature to 140degrees for a further 20-30 minutes.
I found with my oven I need to cook it for a little longer.
Cool and ice with what ever you please - ganache, or regular icing is what I've used. It honestly doesn't need either though! And I served it with yoghurt.
