6 lemons,5 eggs,120gms sugar, 150gm nz butter

finely peel and slice very finely lemon rind

juice lemons,combine with whisked eggs and sugar and butter, place in stainless bowl then place in a pot to make a double boiler, stir continuously until thickened last 10 mins add lemon rind cook for a further 10 minutes place in jars, 

keep in the fridge will keep for at least 6 weeks lol ( it won't to yummy)
