I love a good pumpkin soup, easy to make, keeps well and is filling. I don't really have a recipe per say, it's more of a guessing and taste game so no batch is alike.
This will do for a family of 3-4
Large pumpkin, Garlic, Onion (1 of each), can of coconut cream, vegetable stock, cumin, turmeric, salt, pepper and Olive oil
Coat pumpkin in a mix of cumin and turmeric, (not too much cumin), I like to roast my pumpkin, garlic and onions. Once cooked place, place into a stock pot or something that allows you to add more volume, whizz it up with a whizz stick, adding stock and coconut cream gradually, taking a little each time until you reach the right consistency and flavour that suits you. Add salt and pepper give it one more blitz and enjoy. I like mine thick and those that like it runny can add some more stock or even hot water.
