Roasted Beet Salad and Limoncello
I have shared a favourite salad and a cheeky liqueur made from produce from the garden.
Roasted Beet and Rocket Salad
This salad is one of my go-to recipes for an easy and healthy lunch. It is a delicious salad with roasted beetroot, almonds, feta, lemon, balsamic, olive oil, brown sugar, and rocket leaves. Beetroot and rocket are staples in the garden and usually, there is a lemon on the tree. Spinach can be swapped out for rocket easily. Limoncello
I made this for the first time over the lockdown this year, luckily the bottle store down at the village was open and I was able to get a bottle of vodka. The lemon tree had a glut of fruit so it was only fair that I made limoncello. The recipe I use is very simple calling for just lemons, sugar, vodka, and cloves ( I left those out) Very easy and very delicious either as a shot or with soda and ice (or a quick sip straight out of the fridge when no one is looking!!) This limoncello is quite strong but divine.
