Zucchini and Bacon Creamy Pasta

Our zucchini crop is starting to produce some gorgeous big veges. Zucchini are almost magical how they grow so quickly, turn your back on them and they turn into enormous marrows! I gave our zucchini leaves a spray today with Yates Liquid Copper to combat what looks like the beginning of powdery mildew.

 Zucchini season means it is time to dust off those recipes! Courgette and Bacon Pasta is one of my favourite go-to meals which the family also loves.

Zucchini and Bacon Creamy Pasta is a Nadia Lim ‘My Food Bag’ recipe that I came across a few years ago. This is a throw together type meal, super quick and easy. I simply fry up around 4-5 bacon diced rashers, then add to the fry pan about 4 grated zucchinis. Once these cook down I add about half a cup of cream and ¼ cup chicken stock. I then mix in a small tub of sundried pesto and a few cups of precooked pasta (spiral pasta works well) Parmesan cheese goes well with this dish as well as fresh basil, from the garden of course!
