This recipe I stumbled across almost a year ago and it has become a firm family favourite. With an impending glut of zucchini (I hope) this recipe will be used again and again! Super easy to adjust for vegetarians with tofu sausages and this works really well with gluten free flour! Enjoy.... ;)
4 Tbsp Rice bran oil
4 Sausages, or Vegetarian/Tofu Sausages (can be completely omitted if desired)
1 medium Onion, diced
1 tsp Garlic, grated
3 Courgettes, grated
1½ cups Cheddar cheese, grated
2 Tbsp Chopped fresh herbs, any combination of parsley, chives, rosemary, and thyme, or use 2 tsp of dried mixed herbs
Salt and pepper to taste
½ cup Self raising flour or Gluten Free Self Raising Flour
Heat 2 tablespoons of oil in a large frying pan. Cook sausages until browned. Remove, cool and chop.
Add remaining oil to the pan and cook onion gently without colour for 5 minutes. Add garlic and sausages.
Whisk eggs, add courgette, 1 cup cheese, herbs, flour, and season. Spread evenly over sausages and onions.
Sprinkle over the extra ½ cup of grated cheese then bake at 180C for 35-40 minutes.
Super yummy served with salad in the summer or roast potatoes etc… in the winter!
