A Celebration Meal = from the garden

Garden ready!

I always think making Minestrone soup (thick, more like a stew when I make it!) is like a celebration of our garden’s bounty. My recipe is flexible so changes a lot depending on the season.

But today with production out there starting to really swing into high gear, I have some of our first (bandicooted) new potatoes, lots of fresh herbs, zucchini, broad beans, snow peas, beetroot tops along with some of last of the winter broccoli, kale (that has had a new lease of life after I took off its flower heads) & a pumpkin from last summer.

With some tomato & homemade stock from the freezer & a bit of pasta & parmesan cheese I think we will have a Vegetarian Feast tonight.

And maybe some left for tomorrow’s lunch.
